Ingredients:
- 400g Sweet potato, peeled and thinly sliced (approx 2 medium size potatoes)
- 2 tsp Oil
- 2 tsp Lee Kum Kee Salt Reduced Soy Sauce
- 2 tsp Lemon rind, grated
- 1 tsp Ginger, grated
- 1 tbsp Lee Kum Kee Char Siu Sauce
- 1 tsp Lemon rind as garnish
Method:
Pre- heat oven to 180°C
Mix together the oil, soy, lemon rind, ginger and char siu sauce in a bowl.
Add the sweetest potatoes and toss until thoroughly coated with char siu sauce mixture.
Place sweet potatoes onto shallow non-stick baking tray and bake for 15-18 minutes or until cooked.
Arrange as a stack and garnish with extra lemon rind. Serve with a main meat/fish dish and vegetables.
