Coconut and Lychee Pudding

Cooking Time: 5 minutes

Ingredients:

  • 300ml Chaokoh Coconut milk lite
  • 1L Water
  • ¼ cup Sugar
  • 2 tbsp Powdered gelatine
  • 50g Corn flour
  • 1 can Maeploy lychees in syrup, drained and syrup reserved

Method:

Dissolve the gelatine in ¼ cup of water.
In a large saucepan, blend together the remaining water, sugar, and syrup from lychees.
Heat the mixture over a low heat and stir in the dissolved gelatine.
Continue to stir liquid until it begins to thicken (approx 3 minutes).
Pour pudding mixture into 6 greased dessert cups. Place the lychees decoratively into the pudding, reserving a few for serving.
Refrigerate until set.

Cooking Tip: Alternatively, pour the mixture into an oiled tray, refrigerate and after setting, cut into individual diamond shaped pieces (idea for entertaining larger groups).
