Tofu and Long Bean Stir Fry (Tumis Kacang Panjang)

This delicious way of preparing vegetables will ensure everyone in the family get their recommended daily amount of vitamins, minerals and fibre. This recipe will hold its own with rice or can accompany any other dish.

Cooking time: 20 minutes

Ingredients:

  • 300g Long Beans, cut into 3cm lengths
  • 250g Tofu, sliced into even-sized chunks (2cm/1")
  • 5 Garlic Cloves, finely sliced
  • 3 Shallots, sliced
  • 195ml Vegetable Oil
  • 30ml ABC Salty Soy Sauce (Kecap Asin)
  • 30ml Oyster Sauce (Vegetarian available if desired)

Method:

In a wok, deep fry the tofu in oil 180mls of vegetable oil at high heat for 2 to 3 minutes or until golden brown, set aside and allow to drain. Heat the remaining oil in a wok over high heat and stir fry garlic and shallots until fragrant. Add the long beans, oyster sauce and ABC Salty Soy Sauce and mix well. Mix in tofu and serve hot with rice.

Hot tip: Substitute long beans for any other vegetables you have in your fridge e.g. cauliflower, carrots and broccoli
