Mango and Coconut Pudding

Serves: 4
Preparation Time: 10 minutes
Cooking Time: 3 hours

Ingredients:

  • 1 can (425g) Maeploy Mango Slices in Syrup (reserve 2 slices as garnish)
  • 1 can (165ml) Chaokoh Coconut Milk Lite
  • 200ml Skimmed evaporated milk
  • 2 tbsp Gelatine dissolved in ¼ cup boiling water
  • 1 Lemon, juiced
  • ¼ cup Castor sugar
Sprigs of mint to garnish

Method:

Puree mango slices.
Add all other ingredients and mix until well combined.
Pour into serving bowls or dishes and refrigerate for 3 hours or until set.
Garnish top of pudding with mango slices and mint.

Hot Tip: Try making this dessert with other Asian fruit such as longan, lychee, mango or rambutan.
